Breakfast, the most important meal of the day!

Start your day right, they say.... Who? every doctor, nutritionist and me too.

I love a good breakfast, it doesn't matter if it is later in the day, a good breakfast gets me in the right mood to face the adventures ahead.

At home we love our bacon and eggs, but a fruit bowl, or a spinach/kale and fruit shake does the trick too.

Today, I'll share just a simple but hearty breakfast recipe.


Poached eggs on toast, with smashed avocado and bacon. Garnished with baby plum tomatoes.






There are two ways to poach your eggs, in the oven, or the traditional way, in a pot with water and vinegar.

To poach them in the oven, all you need is a muffin baking tray, fill the bottoms with 1/2 inch water, you can add a few drops of vinegar, add your egg, and bake for at least 15 minutes, please note this is for my gas oven, on mark 5. I would keep an eye on the eggs the first time around just to make sure you don't over cook them. Especially if you like runny yolks.


The traditional way, you need a sauce pan, filled with water, let it heat up to a boiling point, then lower the fire to medium/low, and add 1 tbsp of white vinegar per egg. Add your egg to the middle of the pot, and use a spoon to stir around the egg continuously until it cooks. You should have, soft but cooked egg whites, and your egg yolk will be runny.

I usually stir my eggs for a good 2 minutes each. Again, this will depend on your stove, if it is gas, electric or induction.

I cook my bacon in 2 different ways, in the oven, I line a baking tray with tin foil, lay the bacon slices, allow it to cook on medium heat, gas mark 5, for 20 minutes, then turn the bacon, and cook for another 15 minutes on gas mark 6. This will give you perfectly crispy bacon.

The second way I cook it, and this is better if you don't have a lot of time to cook your breakfast, sprinkle a grill pan (or a normal frying pan) with some water, let it start to bubble, that tells you your pan is ready, lay your bacon slices and let cook without turning them, with all meat, you want to turn them only once, so allow the bottom to cook well, and then turn; this allows the bacon to cook in its own fat, the slices will be crispy but not dry.

Toast your bread, spread some salted butter (to taste), then spread your smashed avocados (we like to mix a bit of grated garlic sometimes). Add your bacon slices and your egg on top.

Plate up, sprinkle with salt and pepper to taste, garnish with baby plum tomatoes, or cherry tomatoes and serve.

Perfect with a French press coffee, or black breakfast tea.
